Ingredients
- 20 oz. frozen spinach (defrosted & strained)
- 1 can artichokes
- 2 shallots chopped
- 2 tbsp. butter
- 2 tbsp. olive oil
- ½ cup milk
- 8 oz. cream cheese
- ¼ cup crème fraiche
- ½ tsp. nutmeg
- 1 tsp. salt
- ½ tsp. pepper
- ¼ cup parmesan cheese
- ½ cup mozzarella shredded, plus ¼ cup mozzarella shredded
Instructions
- In a saucepan over medium heat, place oil & butter.
- Add shallots and sauté for 2 minutes.
- Add spinach and cook for 3 minutes or until dry.
- Pour mixture into a bowl.
- Add the milk to the sauté pan add cream cheese & ½ cup mozzarella.
- Cook until smooth, add crème fraiche and spinach.
- Cook for 1 minute to incorporate flavors.
- Remove from heat.
- Add nutmeg, salt, pepper & grated cheese to mixture.
- Pour into ramekins & top with remaining ¼ cup mozzarella and 2 tbsp. parmesan cheese.
- Bake for 20 minutes at 375°
