Gemelli with “Quick & Easy” Fresh Tomato Sauce

Ingredients
- 1 package of Gemelli (you can use penne as well)
- 10-14 Roma tomatoes
- 1 medium onion
- 3 garlic cloves (chopped)
- 6-8 basil leaves
- 1 tbsp of fresh oregano
- Salt & pepper
- 3-4 tbsp of EVOO
- ½ cup grated parmesan
Instructions
- Cook pasta according to instructions
- In large rondeau pot, add EVOO and place on medium heat
- Add onions, salt, and pepper and cook for a few minutes stirring occasionally. Then add garlic and cook for another 1-minute
- Cut the top of tomato off, and cut open, remove some seeds and throw directly into the pan
- With a potato masher or a large fork, mash tomatoes to create a sauce. Add oregano and a touch more of salt and pepper
- Cover pan, lower heat and simmer for 20 minutes
- A minute before serving roughly tear the basil and stir into sauce
- Raise heat, add in cheese, toss and serve
- Optional: for extra heat add some Italian red pepper flakes.
