Ingredients
Grilled Radicchio
- 2 heads radicchio quartered (keep stem end holding them together)
- 1/3 cup olive oil
- 1 tsp. salt
- ½ tsp. pepper
Dressing
- 1/2 cup olive oil
- ¼ cup sherry vinegar
- 1 shallot chopped finely
- ½ tsp. Dijon mustard
- ½ cup grated pecorino cheese
- 1 tsp. salt
- ½ tsp. pepper
Instructions
Grilled Radicchio
- Prepare grill for high heat.
- In a small bowl whisk olive oil, salt and pepper.
- Coat radicchio with olive oil mixture.
- Grill radicchio cut side down for 3-4 minutes or until leaves are charred and tender.
Salad Dressing
- Place mustard, vinegar, shallots, salt and pepper in a bowl.
- Whisk in olive oil.
- Place radicchio on a plater and spoon dressing over quarters.
- Sprinkle grated cheese over grilled radicchio and toss.
