Tortellini with Mascarpone and Peas

Ingredients
- 1 package frozen tortellini
- 1 cup peas (steamed)
- 1/c small onion diced
- 2 tbsp EVOO
- 2-3 tbsp of Galbani® Mascarpone
- Salt & pepper
- ¼ cup grated parmesan (optional)
Instructions
- Cook tortellini according to instructions
- In non-stick pan heat EVOO and sauté onion on medium-low heat until onions soften, but don’t turn color, add some salt and pepper
- With a scoop colander, add drained tortellini to pan and raise the heat, add in peas and stir for another minute
- Add salt, pepper, and Galbani® Mascarpone
- Lower heat, toss until Galbani® Mascarpone fully incorporated, add parmesan, and serve
