Ingredients
- 3 1/3 cup all purpose flour
- 1 tbsp baking soda
- 3/4 tsp cinnamon
- 1 tsp salt
- 2 1/4 cup sugar
- 4 eggs
- 1 cup oil
- 7 bananas, mashed
- 1/4 cup sour cream
- 2 tsp vanilla extract
- 1 cup walnuts, chopped and toasted (optional)
Instructions
- Preheat oven to 350 F.
- In a standing mixer fit with a whip attachment, whip the eggs and sugar together on medium speed. When it reaches ribbon stage (pale yellow) slowly drizzle in oil.
- Sift together the flour, baking soda, cinnamon and salt. In a separate bowl, mix together mashed banana, sour cream and vanilla extract.
- With a rubber spatula fold in one third of the flour mixture, followed by one third of the banana mixture. Continue to alternate the wet/dry ingredients until all incorporated. Stir in walnuts.
- Divide mixture evenly between two greased and floured loaf pans. Place on the center rack of the oven and bake 45-55 minutes or until a toothpick inserted in the center comes out clean.
- Cool and serve.
